PASTA WITH PUMPKIN AND SAUSAGE
This is definitely one of my favorite pasta sauces, perfect for the season.
Here is the recipe for making the sauce for 4 servings:
In a large pan saute’ one small onion with two spoons of olive oil over medium heat. When the onion is soft add 3 or 4 sausages (I like to use bratwursts) and let them cook for 5 minutes until they are brown (with the help of a wooden spoon, break them into small pieces while they are cooking). Simmer with half a glass of white wine until it’s reduced. Using a food processor, mince about half pound of pumpkin into tiny pieces. Add the pumpkin and half glass of water or broth into the pan, and let everything cook for others 10 minutes. Add some extravirgin olive oil, salt and rosemary.
