“Caprese” is a traditional Neapolitan cake, hailing from Capri island. Basic ingredients are almonds and dark chocolate (I usually use the one of the Trader Joe’s…). There is no flour, so this is an appropriate dessert for anyone who is following a gluten-free diet.
I sometimes like to make a “white” version, using white chocolate instead of dark and adding the zest of one lemon.
Here is the recipe:
- 7 oz finely chopped almonds
- 7 oz finely chopped white chocolate
- 3/4 cup sugar
- 10 tbsp soft butter
- 4 eggs
- 1 tsp baking powder
- 1 tsp corn starch
- one lemon peel
Bake for about 40 minutes to 350 degrees.
