Who knows the Raffaello Ferrero?
Personally, they are my favorite and I have to thank Mara that gave me the recipe a couple of years ago!
They are nothing short of stellar 🙂
Ingredients for 18 raffaello treats:
5.3 ounces ricotta cheese
5.3 ounces sugar
5.3 ounces white chocolate
8.8 ounces coconut flour
18 shelled almonds
I whipped the ricotta cheese in a bowl for a minute. While I kept whipping I added sugar and 5,3 ounces of coconut flour. Finally I added the white chocolate that I have already melted.
I put a tablespoon of the mixture in one of my hand and I placed one almond in the middle making a spherical shape, I covered the little ball with the rest of the coconut flour (3.5 ounces)that I poured in a plate. I Placed the Raffaellos into colorful cups and stored them in the refrigerator as long as I served them!
