I just learned that one of the best ways to marinate white meat is with coconut milk.
I tried and, as a matter of fact, the chicken thighs I made were very tender and with a special flavor.
Here are the ingredients I used for the marinade: coconut milk, lime juice, extra virgin olive oil, garlic, salt, pepper, sage. I put the chicken thighs in a casserole and coat them with the marinade and I left them in the refrigerator for 2 hours.
The recipe I made after is simple and light.
Heat two tbsp of olive oil in a pan over medium-high heat. Add the chicken thighs and fry them gently on both sides. Pour in the marinade, after taking off the garlic. Add one potato, peeled and chopped, and season with salt and pepper. Cook over low heat for about 20 minutes. At half cooking time add some carrots, peeled and cut in pieces, and some broccoli, cut in pieces too.
You may serve this with some rice!
