Here is a fresh and tasty sauce for a summertime pasta.
This is what you need for the sauce:
- 3 zucchini, grated
- 1 cup pitted kalamata olives, finely chopped
- 1 tsp capers, finely chopped
- 2 cloves of garlic, flattened
- 4 tbsp extra virgin olive oil
- salt and pepper to taste
Place everything on a baking pan covered with parchment paper.
Bake at 355 F for about 10/15 minutes.
Boil the pasta (Spaghetti are the best for this sauce.)
When the zucchini are soft, remove the garlic and pour the sauce on the pasta, adding extra virgin olive oil, Italian parsley, breadcrumbs and Pecorino cheese to taste.
